Mango Bread Pudding

INGREDIENTS:
Old Bread (Pandesal)
Butter
Fresh Mango
Cream
Eggs
Cinnamon
Sugar
Vanilla
White Chocolate
Other Items Needed:
Small Ramekins (Heat Resistant Dishes)
Banana Leaves for Decoration
How To Make:
- In a bowl, whisk ½ cup of heavy cream and 1 tbsp of sugar. (Put on ice)
- Separate 3 mangos from the skin.
- Break apart 3-4 pieces of old Pandesal Bread and place in a bowl.
- Make the Custard mix.
- In a separate bowl, add 3 eggs.
- Add 2-3 cups of cream.
- Add 1 teaspoon of vanilla extract.
- Add 1-2 teaspoons of ground cinnamon.
- Add ½ cup of sugar.
- Whisk everything together.
- Add 2-3 tablespoons of white chocolate to the bread.
- Add mangos to the bread.
- Add the custard mix to the bread and stir until evenly distributed.
- Butter the inside of the ramekins and place the mixture into each dish.
- Place dishes into the oven at 375 – 400 degrees for 20 - 25 minutes.
- Remove dishes from the oven, allow them to cool, and add whipped cream.
