Mango Bread Pudding

INGREDIENTS:

Old Bread  (Pandesal)

Butter 

Fresh Mango 

Cream 

Eggs  

Cinnamon 

Sugar

Vanilla 

White Chocolate

Other Items Needed:

Small Ramekins (Heat Resistant Dishes)

Banana Leaves for Decoration

 

How To Make:

  1. In a bowl, whisk ½ cup of heavy cream and 1 tbsp of sugar. (Put on ice)
  2. Separate 3 mangos from the skin. 
  3. Break apart 3-4 pieces of old Pandesal Bread and place in a bowl. 
  4. Make the Custard mix.
    1. In a separate bowl, add 3 eggs. 
    2. Add 2-3 cups of cream.
    3. Add 1 teaspoon of vanilla extract. 
    4. Add 1-2 teaspoons of ground cinnamon.
    5. Add ½ cup of sugar.
    6. Whisk everything together.
  5. Add 2-3 tablespoons of white chocolate to the bread. 
  6. Add mangos to the bread.
  7. Add the custard mix to the bread and stir until evenly distributed. 
  8. Butter the inside of the ramekins and place the mixture into each dish. 
  9. Place dishes into the oven at 375 – 400 degrees for 20 - 25 minutes. 
  10. Remove dishes from the oven, allow them to cool, and add whipped cream.
